Kitchen open but no kitchen activity was happening at time of inspection.
  • Equipment, Clothes Washers and Dryers, Storage Cabinents, Contamination Prevention
    Observation: The clothes dryer is located in the kitche in an area that may contaminate food.
    Correction: Relocate the washer or dryer so that exposed food, clean equipment, utensils, linens, or single-service and single-use articles can not be contaminated. Please correct within 30 days.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
  • Lighting, Intensity
    Observation: Less than 10 foot candles of light was noted in the dry storage area.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

Cook did not come to work tonight, so the kitchen part of the establishment was closed. I did not observe any food preparation. Sections that show compliance (e.g. hand-washing, proper eating, no discharge from nose, etc.) are based on observing the bar tender.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level. Quat sanitizer dispenser was not working, but there was chlorine available. Once the Quat sanitizer dispenser is working, obtain a quat sanitizer test kit. Please correct within 30 days.
