- Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
Observation: Quaternary Ammonium sanitizing solution auto dispensed into the three compartment sink was not at an acceptable concentration. Test strips showed concentration less than 100 PPM.
Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations. Kitchen manager has phoned in request for a repair and will manually adjust sanitizing solution to the accepatble concentration ( 200 to 400 PPM) with the use of test strips.

- Critical: Package Integrity* (corrected on site)
Observation: Food packages are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants (ex: dented food cans) Dented cans stored on shelf for use.
Correction: Discard or return to distributor any food packages that are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants.( Canned food dented on rim or seam must be placed on shelf labeled " Not for use." until they can be returned or discarded.)

- Critical: Food - Potentially Hazardous Food - Cold Holding*
Observation: Foods cold holding at improper temperatures. Bar B Q sauce 44, cheese 41, sweet relish 43, cheese 43 F.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

- Critical: Backflow Prevention, Air Gap* (corrected on site)
Observation: An air gap between the water supply outlet and the flood rim level of the spray rinse faucet head is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system. ( This is in dish room at garbage disposal sink. Correct before fall of 2013.)
Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.
