    Correction: Obtain a Quat test kit so that employees can accurately monitor the concentration of the sanitizing solutions in the three compartment sink and maintain them at a safe and effective level.

    Observation: The nonfood contact surface of the can opener has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Areas discussed with food-service staff: 1) employee health policy (posted employee health notices and employees gave proper responses to symptoms needing restriction or exclusion), 2) cleaning & sanitizing of food contact surfaces (dishmachine was reaching 180+ on final rinse), 3) food temperature monitoring (log observed) and use of time as a public health control for certain foods and 4) food suppliers / approved sources of food.

    Observation: The food on display is not protected from contamination. Sneeze guards are needed along the student service line to protect foods on display.
    Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination. Recommend sneeze guard or plexiglass shield (discuss with county maintenance department).
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Mop room noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
