Observation: The nonfood contact surface of the curtain hung at door is not corrosion resistant, nonabsorbent, and/or smooth.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Operator agreed to remove.
- Drainboards
Observation: The drainboards/shelving unit not located above 3 compartment sink nor does it drain into 3 compartment sink--so is not self draining.
Correction: Operator agreed to move wire shelving unit over 3 compartment sink so it could self drain so they can be properly stored as they accumulate during operation.

Lockn 2014 inspection. Discussed food handling processes, employee health policy, proper waste-water disposal, keeping foods at 41 and 135 degrees. Mobile unit appeared clean and well-organized. Pre-opening inspection of new mobile truck. Unit layout is well organized and appeared generally clean. Refrigeration air temperatures were within required range. Operators knowledgeable about employee health policy. Commissary will be at Frye Spring Beach club. Permit was issued to expire March 31, 2015. Operator to revise "to scale" drawings of this unit for the file for truck interior and submit to Health Dept. by 3/26/14. Next events--UVA softball games April 5th, April 22--3-8pm and Foxfield on April 26th.
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Floor in unit noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
