  • Sponges, Use Limitation
    Observation: Sponges are being used to wipe down food contact surface of the equipment in the bar.
    Correction: Discontinue use of sponges for this purpose as they are to be used only where they will not contaminate cleaned and sanitized, or in-use food contact surfaces.
  • Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent
    Observation: The nonfood contact surface of the blue soda crates used as a storage shelf in the bar and the cardboard used as a divider in the glass cooler are not corrosion resistant, nonabsorbent, and/or smooth.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the sandwich prep unit (corrected) and the display case.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Plastic food containers in the walk in cooler and the plastic divider on the steam table were observed in a state of disrepair and damaged.
    Correction: Repair the equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment - Cutting Surfaces
    Observation: The cutting boards on the dish drying shelf are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. Boards were discarded.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: ceramic bowls, stainless steel saucers, stainless steel pans stored on the bread rack, microwave, interior of both ice machines, pasta strainer. All small items were taken to the dish machine area.
    Correction: Clean and sanitize these surfaces for food contact.
  • Non-Food Contact Surfaces
    Observation: The following nonfood contact surfaces have accumulations of grime and debris: doors on all of the refrigeration units, inside of both sandwich prep units, cabinets under both of the fryers, storage shelf where the microwave is stored, air vent covers in the reach in freezer, drink box rack in the pizza make area,
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Equipment and Utensils, Air-Drying Required (repeated violation)
    Observation: Plastic cups in the wait staff area and saucers on the cook's line were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (corrected on site)
    Observation: Clean stainless steel frying pans, plastic plates, and bowls were observed stored with the food-contact surface facing upward.
    Correction: Store equipment and utensils covered or inverted to prevent contamination while in storage.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (corrected on site)
    Observation: Observed tongs hanging on the oven door.
    Correction: Store equipment in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.

    Observation: Single service to go containers and lids on the cook's liner were observed unprotected from contamination.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser.
  • Floors, Walls, and Ceilings - Cleanability (repeated violation)
    Observation: Ceiling in both restrooms are not smooth and easily cleanable.
    Correction: Repair or replace ceiling to make it smooth and easily cleanable.
  • Outer Openings - Protected (corrected on site)
    Observation: Observed rear door propped open. Outer opening of the food establishment is not protected against entry of insects and rodents.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
  • Physical Facilities in Good Repair
    Observation: The following physical structures are not maintained in good repair: 3 lights out in the hood system, grate on the rear door is rusted, hole in the wall under the storage rack in the dry storage room, and the hot water handle missing in the women's restroom
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The light shields in the dry storage room and the floor throughout the kitchen required cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
