Facility does not prepare or cook foods. Foods are prepared at Forest-Glenn Middle school and then brought to this facility for hot/cold holding and served. A couple of items observed hot held at 101 & 109. PIC stated transportation of foods is 20 minutes. Foods were place in hot holding unit. PIC placed foods in steam table to get temp to 135F or above. EHS recommends temping foods prior to packing for transport and looking into heat pads to place with foods in holding case.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a SFSPAC (QT) test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: ice machine observed with mold where ice comes out of machine.
    Correction: Clean and sanitize these surfaces for food contact.
  • Handwashing Cleanser - Availability
    Observation: Soap was not provided at the hand washing lavatory in the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Lighting, Intensity
    Observation: Less than 50 foot candles of light was noted at the stove area. Light bulb is out at the hood system which is lowering the required lighting to the area. Have the bulb replaced right away.
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry. Mops observed stored in mop bucket in utility closet. Mops must be hung to allow proper air flow to prevent pathogen growth and hung with mop heads downward to prevent handle from being contaminated.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
