Temperature Measuring Devices Observation: There was no temperature measuring device located in the over under tru 2-door
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Hand Drying Provision (corrected on site) (repeated violation) Observation: No disposable towels were provided at the hand washing lavatory in the. Clean dry wiping cloths were provided, ran out of towels prior to delivery. Instructed to obtain a roll that is used in bathroom dispensers and place near sink for drying.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
Handwashing Signage/Handwashing Facilities (corrected on site) Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees. EHS observed no handwash sign in kitchen at handsink.
Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees. EHS provided facility manager with 4 english/spanish signs and instructed one to be placed immediately.

NOTES: - All fruits are rinsed prior to cutting and/or serving. - Ensure that all lights used over food services areas are shatter-proof. - Ensure that thermometers are located in all cold units. - Ice machine observed in clean and in proper working condition. - All employees are up-to-date with Food Handler's cards. Good job!
Food Storage Containers - Identified with Common Name of Food Observation: Unlabeled food containers. Observed unlabled cereal containers at service bar.
Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

Quats used as sanitizer. Test kit provided. All employees possess a current Suffolk health card. Employee health policy reviewed and in place. Reportable illnesses also reviewed. All information reviewed with PIC.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: GE reach-in unit observed to have ambient air temps >41F. Rear of unit: 45F, front of unit: 51F. Internal food temps >41F.
Correction: Ensure that 41F or below is maintained within all cold holding units. All PHF items voluntarily discarded. Unit not to be used per PIC until <41F is maintained. Service call to be placed immediately following conclusion of inspection.

Correction: Provide hand towels at hand sink and properly maintain at all times to encourage good handwashing habits amongst food service workers.

Risk Factor
Continental breakfast served daily M-F 6-9am and S-S 7-10am. Menu has been expanded to include fresh waffles. Mix provided/maintained inside of protected plastic pitcher. Waffles prepared by customer in waffle iron. Other menu items include pre-packaged milk, juice, dry cereal, and donuts. Quats used as sanitizer. Contaminated test kit provided. Provide and maintain test kit. Yogurt observed sitting on top of boxes at room temp. Unknown reason per PIC. Yogurt voluntarily discarded by PIC. Temperature logs maintained daily. Documentation provided. All information reviewed with PIC. No violation noted during this evaluation.
