    Observation: In use open drinking containers stored in a manner that may contaminate food contact surfaces or utensils. Inspector observed open container of soda on the counter in the food prep area. Operator removed open container.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.

    Observation: Unwrapped or uncovered food in the low boy refrigerator. Insector observed numerous containers of sauce and food items uncovered and not protected from dripping water. Operator covered all items.
    Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings.

    Observation: Improper use of wet wiping cloths. Numerous wet rags stored on counter tops.
    Correction: Use clean wet wiping cloths for wiping spills from food-contact and nonfood-contact surfaces of equipment. Store wet wiping in a chemical sanitizer at the proper concentration between use.

    Observation: Numerous containers of chicken, shrimp, and beef stored in the walk-in refrigeration unit were not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The nonfood contact surfaces of the low boy refrigerator have accumulations of grime and debris. Doors and outside surface of the entire refrigeration unit need to be cleaned.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site)
    Observation: When tested, no sanitizer or a low concentration of chemical sanitizer was found in the wiping cloth bucket storing wiping cloths used on food contact surfaces. Operator did not have a storage container with sanitizer available for testing. Operator provided a sanitizer bucket and placed all the wiping rags in the bucket. Inspector tested and observed150 ppm.
    Correction: Provide bleach based sanitizer at proper concentration of 150 ppm to properly sanitize food contact surfaces.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site) (repeated violation)
    Observation: The handwash station next to walk-in reefer is being used for purposes other than washing hands. Inspector observed plastic food containers stored in sink preventing its use. Operator removed containers from sink.
    Correction: The handwash facility identified above is to be used for washing hands only

    Observation: All floors and walls of the entire kitchen need are noted in need of cleaning. Heavy grease build up and areas of food spillage were noted throughout the facility.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Observation: Container of chicken wings at the front low boy was observed cold holding at improper temperatures. Chicken wings at the top of the container were not cold holding at the correct temperature. Operator removed chicken wings to lower refrigerator during inspection.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose
    Observation: The handwash station at the front of kitcken is being used as a dump station.
    Correction: The handwash facility identified above is to be used for washing hands only

    Observation: No disposable towels were provided at the hand washing lavatory in the hand sink next to back door. Operator provided paper towels during inspection.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Less than 10 foot candles of light was noted in the walk-in freezer.
