Discussed inspection report with operator. Discussed with operator that the mobile food unit may not operate without running water and the possibility of having the permit revoked if violation is observed during future inspections.
  • Critical: Reheating for Hot Holding* (corrected on site)
    Observation: Gravy classified as ready-to-eat (RTE) taken from a commercially processed, hermetically sealed container, or from an intact packaged purchased from a food processing plant, was not reheated to the proper temperature for hot holding. Operator was reheating gravy in a crock pot. Operator rapidly re-heated gravy to 135 on the flat top grill.
    Correction: Reheat commercially processed RTE food for hot holding to 135°F or above.
  • Critical: Water Capacity* (corrected on site)
    Observation: There is not a sufficient water supply to this facility for proper sanitization within this food service establishment. Inspector noted no available running water on the mobile food unit. Operator ceased operations. Operator repaired water pump before inspector departed the scene. Operator was cautioned not operate without running water in the future.
    Correction: EHS is to confer with his/her supervisor for possible closure of establishment for an imminent health hazard. (See section 12 VAC 5-421-3910)
  • Imminent Health Hazard - Ceasing Operations & Reporting (corrected on site)
    Observation: The permit holder failed to discontinue operations and notify the Health Department that an imminent health hazard may exist because of an emergency. Inspector noted that running water was not available on the mobile unit. Operator ceased operations. Operator repaired the water pump while inspector was on scene.

  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing facility located in mobile unit was blocked by containers, preventing access by employees for easy handwashing. Operator removed all containers from the handwashing sink.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the all containers preventing its use.
