Observation: Foods measured in the walk in refrigerator where measured above 41 degrees and cold holding at improper temperatures
Correction: Move the foods to a different location until the unit is corrected or adjustments made to the cooling unit. Do not use the unit to hold potentially hazardous foods for cold holding until the unit is maintaining foods at 41°F or below to inhibit the growth of harmful bacteria.

Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
Correction: The dish machine was not producing any sanitizer solution to the sanitizing water. Please make necessary repairs to the machine before using to sanitize utensils. Other means of sanitizing should be used until repairs are made..

Observation: The following equipment nonfood-contact surfaces were observed soiled to sight and touch: The deep fryer and the wall behind the deep fryer has visible accumulation of oil and food debris.
Correction: Replacing the oil pans would be a great opportunity to clean the fryer equipment and area behind the deep fryer. Clean and sanitize these surfaces periodically to prevent accumulation of oil and debris.
