Cooling Methods (corrected on site) Observation: The methods used for cooling were not adequate.
Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
Temperature - Food Temperature Measuring Devices - Provided Observation: A small-diameter metal stem thermometer is not available in the facility.
Correction: Obtain a small diameter metal stem food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
Equipment - Good Repair and Proper Adjustment Observation: The ventilation hood filters were observed to be installed incorrectly.
Correction: Install the ventilation hood filters in a vertical orientation for proper functioning of the hood filter system.

Ensure standing water is addressed in refrigeration units frequently. Employee health policy and food manager certificates reviewed and current.
Critical: Shellfish - Shellstock; Maintaining Identification* (corrected on site) Observation: Shellstock tags were observed without the date of last sale.
Correction: The date when the last SHELLSTOCK from the container is sold
or served shall be recorded on the tag or label. Keep shellstock tag with product until it is completely sold.
Gloves; Use Limitation (corrected on site) Observation: Soiled single-use gloves still in use.
Correction: Discard gloves once soiled.
Temperature Measuring Devices (corrected on site) Observation: There was no temperature measuring device located in the front counter display unit and the Whirlpool refrigerator.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Conformance with Approved Procedures Observation: Temperature logs are not being maintained by the establishment.
Correction: Maintain accurate temperature logs.

Ensure utensils are not submerged in sanitizer for a prolonged period of time. Employee health policy and temperature log records reviewed. Ensure thermometers are easily visible in all cooling units. No violation noted during this evaluation.
