Employee health, reportable illnesses, reporting procedures, operator responsibility, cooking/cooling/reheating reviewed in detail with PIC. Quat test kit required. Color coded cutting boards to be used for raw chicken and fresh vegetables to prevent cross contamination. Date labeling reviewed. Ice scoop required. Wood panels on floor not conducive to a smooth, easily cleanable surface. Cracks allow for dust, crumbs, and debris to accumulate. PIC advised issue will be addressed with landlord.
