  • Critical: Food - Potentially Hazardous Food - Cold Holding* (repeated violation)
    Observation: Cold holding at improper temperatures: white refrigerator is 50 F and is not holding food at
    41 F or below. Shell eggs are 50 F. Only TCS food stored in this refrigerator. Cut tomatoes left out at RT are 68 F.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Food out of temperature discarded. No TCS food will be stored in white refrigerator and time control will be used for cut tomatoes.

  • Critical: Cooling* (corrected on site)
    Observation: Grilled onions and peppers noted not being adequately cooled to prevent the growth of harmful bacteria. Grilled onions and peppers cooked this morning and placed in a covered container in the refrigerator are still 70 F.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Grilled peppers and onions discarded during inspection. Suggest cooking peppers and onions and keeping them hot during the day instead of cooling them.

    Observation: Cold holding at improper temperatures: white refrigerator is not holding food at 41 For below. milk 49 F, bologna 50 F, sausage 49 F.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. TCS food that was out of temperature was discarded during inspection. Hamburgers that were just recently pattied were moved to the other refrigerator during inspection. Do not store any TCS food in this refrigerator until it can hold food at 41 F or below.
