  • Cooling Methods
    Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer. Precooked frozen chicken tenders are heated and cut up and placed in tightly closed plastic containers and stacked on top of each other while still hot (52 F).
    Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Suggest cooling tenders down to 41 F or below before placing them in plastic containers.

    Observation: Wiping cloths improperly stored between use. Wet wiping cloths on counters.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Quaternary Ammonium sanitizing solution used was not at an acceptable concentration. Quat solution in 3-compartment sink was <150 ppm.
    Correction: Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations. Concentration of solution adjusted to 200 ppm during inspection.

Changed name of restaurant from Elderberry's to Fruitions. Operators of the restaurant remain the same with basically the same menu. Copy of new menu was received. Issue yearly health permit.
