Observation: Clam chowder was cold holding at improper temperatures in the walk-in reefer. Inspector using a internal thermometer observed a temperature of 49 degrees. Operator using a internal thermometer observed a temperature of 48 degrees. Operator disposed of clam chowder. Discussed proper cooling methods with operator.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

Good date marking and labeling was observed during inspection. Walk-In Refrigerator was observed to very clean and orderly. Operator was provided a copy of the inspection report.
- Sanitizing Solutions, Testing Devices (corrected on site)
Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions. Operator provided a test kit during inspection,
Correction: Obtain a Quat test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Wall behind the soup kettle and filter vents on the icemaker are noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Operator provided copy of inspection. Operator corrected the critical violation noted on the July, 29, 2015 inspection by providing a designated area for employees to consume food away from the kitchen area.

Observation: Employees observed working in the food service area without proper hair restraints.
Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

Observation: The nonfood contact surface of the fryer and area behind fryer has accumulations of grime and debris.

Observation: A plate of consumed chicken wings and open bag of chips was observed by the inspector stored near the cookline. Consumption of personnel food items may contaminate food, clean equipment, utensils or other items needing protection.
Correction: Provide a designated area where employees may consume food so as not to contaminate exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles, or other items needing protection.

Observation: Inside of icemaking machine had build up of mildew inside of door.
Correction: Clean food-contact inside surfaces of icemaker to prevent the growth microorganisms on those surfaces.

Observation: Soap was not provided at the hand washing station behind bar area.
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands. Operator installed soap dispenser during inspection.
