The purpose of this visit was to conduct a routine inspection. All temperatures were observed in compliance during today's inspection. Employee health policy has been implemented and is complete.

The purpose of today's visit is to conduct a routine inspection.

The purpose of today's inspection is to conduct a routine inspection of the food service operation. Today's lunch menu included pizzas purchased precooked/hot from the permitted foodservice operation at a nearby wholesale club and frozen green beans reheated for immediate service in the onsite microwave. The food service is limited. Pasta is cooked in "rice cookers", cooled, and used next day for macaroni and cheese.
A Health Department packet with information on norovirus and influenza has been provided to and discussed with the center's Director.
  • Critical: Date Marking of Refrigerated, Ready-to-Eat PHF (TCS Food) (corrected on site)
    Observation: Observed that an opened package of cheese slices (not individually wrapped) was not dated for disposition.
    Correction: Date commercially processed, refrigerated, ready-to-eat foods when opened with a date to indicate date by which to use, serve, or discard. Corrected during inspection by marking with opening date of November 14, 2013.

The purpose of this visit was to conduct a risk factor inspection.
EHS discussed cooling methods, temperature logs, thermometer use and datemarking.
  • Critical: Responsibility of PIC to Require Food Employees to Report GI Symptoms or Cuts, Disease, Medical Condition or Exposure to PIC (corrected on site)
    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)
