Adequate thermometer, steramine tablets, and test kit. Employee health policy is already in place. Send the inspector copies of invoices showing the necessary repairs have been made to the water pump in the mobile unit. Hot water would not come out of the hand sink, but did come out of the 3-vat sink. Provided a commissary agreement with Bon Air BP at 8806 Forest Hill Avenue (804-272-4149) for the dumping of gray water and filling of the potable water tank. Owners are in the process of working and getting a commissary that provides food preparation space.

Adequate thermometer, quaternary ammonia spray sanitizer, steramine tablets, and test kit. 3-vat sink not currently set up or in use. Employee health policy is in place and was reviewed with the food handler. Notes: 1. Some method for hot holding cooked egg rolls need to be developed. Egg rolls are cooked in a pot on the burner unit, and then sit in an open pan prior to an order being placed. (Try wrapping them in tin foil ASAP.) When ordered, egg roll is then further heated in a toaster oven. Temperatures of all hot held product must be kept at 135° F+ at all times. The egg rolls observed today were further heated and served within a few minutes. Less than 5 rolls are being prepared at one time. 2. The new RIC/RIF is holding very good temperatures today. Concerns regarding proper cold storage seem to be addressed with the new source of refrigeration. 3. Brisk business ensured all product would be utilized within 4 hours today.
