    Observation: Commercially made Salisbury steak in gravy was being heated in a crock pot for lunch service. The product had been purchased frozen and an afternoon-shift employee put it into the refrigerator yesterday, to thaw overnight for today's consumption. Morning-shift employees understood that the product was pre-cooked and so their goal was to heat it to serving temperature. There was discussion with the EHS about the hazards of heating food using only crock pots. Crock pots heat food slowly, so it can remain in the danger zone too long. Instead food should be heated "rapidly" in microwave, in oven, or on stove top. After that it's OK to use crock pot for hot holding. Then the product's packaging was found. The steaks were not labeled "pre-cooked
    Correction: instead, the manufacturer instructs consumers to "cook thoroughly to 165°F" indicating that the product must be actually cooked (not just heated to serving temperature) before it is served.

    Observation: Assorted ready-to-eat (RTE) foods (example: baked beans
    Correction: open package of commercially made lunchmeat) in the refrigeration unit were not properly dated for disposition. Labels were lacking or not current.

    Observation: Single-service items (plastic bags as from grocery store) were observed reused for the storage of food.
    Correction: Discontinue the reuse of single-use containers for food storage. Provide approved reusable food storage containers designed for your food storage needs.

    Observation: The handwash station beside the 3-vat sink was being used as a dump station for used wiping-cloths sanitizer solution.
    Correction: The handwash facility identified above is to be used for washing hands only.

    Observation: Evidence suggesting the presence of mice (apparent mouse droppings) was observed on shelves in the dry-storage closet adjacent to the kitchen, where cookies and cereal were stored. Closet contained mouse traps (no mice seen on/in the traps).
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required. The management agreed to request a return visit from their regularly scheduled pest control service.

    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

    Observation: The ready-to-eat (RTE) commercially processed food (milk, other) in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 100 parts per million when the pH is at 10 or less and the water temperature is 55°F.

    Observation: Plumbing connections under the 3-vat sink sink are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair. PIC stated during inspection that a plumber was scheduled for the following day (1 May 2014). PIC to inform EHS when repair has been made.
  • Lighting, Intensity (corrected on site)
    Observation: Less than 10 foot candles of light was noted in the dry storage area's hallway. Light bulb burnt out.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning. Light bulb was replaced.
