Hand washing sign is needed at the hand sink, by the pizza make table.
Product should only be placed on the counter, in ice baths, during busy periods. If foods are in ice baths on the counter, only do limited amount of product.

    Observation: Inadequate record keeping system of mussel tags.
    Correction: Use an approved record keeping system that keeps the tags or labels in chronological order correlated to the date when, or dates during which the shellstock are sold or served.

Do not leave butter on the counter.
Discussed proper cooling procedures with operator. Do not place product in the walk-in, to in turn warm cooler/product.
Rolling cart being used for food prep should not be stored next to the hand sink, unless a splash guard is installed on the hand sink.
Ice buckets must be stored inverted.
Do not stack pans that are still wet. Air dry prior to stacking.
Provided and discussed FDA form 1-B with operator.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions. (for the chlorine dish machine at the bar)
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
