Establishment with an adequate metal food stem thermometer & quaternary test kit. The dish machine reached an adequate hot sanitizing temperature. The wiping cloth/sanitizer set-ups were adequate. Adequate employee health policy in place. Health permit posted & visible.
Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site) Observation: Meatballs were found hot holding at improper temperatures.
Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. (product was discarded)

Non-critical violations must be corrected within 30 days. Adequate food testing thermometer and chemical test kit. Sanitizing solution tested at 200 ppm in the sani buckets. Discussed storage of sani buckets, required to store them 6 inch off the floor.
Responsibilities of Owner or Proprietor Observation: Absence of no-smoking signs or international no-smoking signs in non-smoking area.

Equipment and Utensils, Air-Drying Required Observation: Plastic and metal pans were found stacked while wet after cleaning and chemical sanitization.
Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

Temperature - Food Temperature Measuring Devices - Provided Observation: The person in charge could not provide a food temperature measuring device.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
Outer Openings - Protected Observation: Outer opening of the food establishment is not protected against entry of insects and rodents (Spacing was observed at the bottom of the rear exit door).
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
Handwashing Cleanser - Availability Observation: Soap was not provided at the hand washing lavatories throughout the facility.
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
Hand Drying Provision Observation: No disposable towels were provided at the hand washing lavatories throughout the facility.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
Physical Facilities in Good Repair Observation: Missing ceiling tiles and open spaces were observed in the rear and front storage and prep areas.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
