Observation: There is no running water in the handwashing sink. A food employee was observed cleaning their hands in a food preparation sink or a sink used for utensil washing.
Correction: Instruct food employees to clean their hands in a handwashing lavatory. Food employees may not clean their hands in a sink used for food preparation or utensil washing.
- Temperature Measuring Devices
Observation: There was no temperature measuring device located in the all refrigerators.
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
- Cooling, Heating, and Holding Capacities
Observation: The reach/prep refrigerator not holding proper cold holding temperature (48°F , 52°F temperature were recording.
Correction: Repair refrigerator, improper food storage temperatures are a major contributing factor to foodborne illness.
- Handwashing Lavatory, Water Temperature, and Flow
Observation: Unable to take water temperature, there is no running water at the handwashing sink.
Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.
- Plumbing System Maintained in Good Repair
Observation: Handwashing sink faucet cold and hot water lines.
Correction: Repair and maintain all plumbing components ans fixtures.
- Physical Facilities - Cleaning Frequency and Restrictions (repeated violation)
Observation: The ceiling and ceiling vents in the noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Observation: The nonfood contact surface of the small refrigerator has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.

Observation: Flies observed in the unit. There is not a screen at the back area.
Correction: Install a screen window at the back of the mobile unit. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.
