    Observation: The food contact surface of the plastic food pans are not smooth, contains cracks, chips, or pits and can not be easily cleaned.
    Correction: Replace the plastic food pans to provide a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent buildup of food debris.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The pizza oven conveyor and the hinge on the prep unit door were observed in a state of disrepair and damaged.
    Correction: Repair the pizza oven conveyor and prep unit door hinge to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: Pizza oven, soda machine ice chute.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Water from the handwashing sink at the drive thru was measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

    Observation: The computer displays and mounting hardware, shelving at the make line, pizza oven, and walk-in, floors under equipment, wall under dining soda machine (corrected during inspection), and inside compartment under the dining room soda machine (corrected during inspection) were noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Correction: Repair the sanitizer dispenser to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the sanitizer dispenser/make line refrigerator door hinges/pizza warmer door handle replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
