This inspection was a risk factor inspection that focused on the 5 risk factors for foodborne illness (food from unapproved sources, inadequate cooking temperatures, inadequate holding temperatures, improper employee health and hygiene, and cross contamination of food and equipment). Good retail practices (GRPs) observed were discussed with operator and/or staff at time of evaluation. Refer to 5/30/14 for repeat GRPs such as splashguard separating at prep sink and walk-in freezer door gasket torn. 2015 permit issued

    Observation: observed cuting blade twedged in the hanger frame of the equipment rack over 3 compartment sink and wall
    Correction: do not wedge equipment in the crevices formed by hanging frame and wall

    Observation: multiple sealed packs of food ( beans /. beef and chicken ) placed 2 packs each bean and beef and one chicken in the seal /.flatten unit all placed into the same bus tub to cool between 4 and 5 am this morning still were IT 45 -48 degrees ( at 10:45 am )
    Correction: product is to cool from 135 to 70 degrees in 2 hours and from 70 to 41 in the following 4 hours . It is believed that the multiple packs sitting flattened together witharm mass that did not cool properly .
    Strongly recommend that packs are seperated by one inch in the press and that each press is layered singly in walk in to have air flow to cool mass correctly
