Observation: Pass-thru Prep Cooler observed with an ambient air temperature of 48 degrees at the time of inspection.
Correction: DISCONTINUED THE USE OF THE PASS-THRU PREP COOLER AT THE TIME OF INSPECTION. Ensure the pass-thru prep cooler is capable of maintaining food temperatures at or below 41 degrees to prevent potential bacterial growth.

Observation: An air gap between the water supply outlet and the flood rim level mop sink basin is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
Correction: PROVIDED. Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.

- Light Bulbs Protective Shielding
Observation: The ceiling mounted light fixture was observed missing a light cover over the fluorescent light tubes in the warewashing area
Correction: the fluorescent light tubes were not shielded, coated, or otherwise shatter-resistant.
- Physical Facilities in Good Repair
Observation: A hole in the wall was observed behind the rear bag-in-a-box system ( an access cover panel was not provided for the wall access)
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
- Mops - Drying Mops
Observation: Mops not hung up to air dry by the rear curbed mop sink.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
