Establishment with an adequate metal food stem thermometer & quaternary test kit. The three vat sink set-up was adequate. Adequate employee health policy in place. Note: Post current health permit so it is visible to the public.
  • Critical: Reheating for Hot Holding* (corrected on site)
    Observation: Taco meat was not reheated to 165F within 2 hours to eliminate pathogenic bacteria.
    Correction: Rapidly reheat food for hot holding to 165°F or above within 2 hours.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Water from the hand-sink was measured at a temperature less than 100°F. (65 & 70 degree Fahrenheit)
    Correction: Make necessary adjustments to valves and lines serving the hand-sinsk to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

    Observation: Pass-thru Prep Cooler observed with an ambient air temperature of 48 degrees at the time of inspection.
    Correction: DISCONTINUED THE USE OF THE PASS-THRU PREP COOLER AT THE TIME OF INSPECTION. Ensure the pass-thru prep cooler is capable of maintaining food temperatures at or below 41 degrees to prevent potential bacterial growth.
  • Critical: Backflow Prevention, Air Gap* (corrected on site)
    Observation: An air gap between the water supply outlet and the flood rim level mop sink basin is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
    Correction: PROVIDED. Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.

    Observation: Water from the handwashing sink at front drive-thru and ladies restroom was measured at a temperature less than 100°F (hot water measured-95 degrees F and 92 degrees F). Hot water was available at the other sinks located within the facility.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.
  • Light Bulbs Protective Shielding
    Observation: Light bulb in walk-in freezer was observed not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

  • Food Storage - Clean and Dry Location
    Observation: Food stored on the floor or food stored less than 6" above the floor (boxed food products were observed stored directly on the floor in the walk-in freezer);Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • Light Bulbs Protective Shielding
    Observation: The ceiling mounted light fixture was observed missing a light cover over the fluorescent light tubes in the warewashing area
    Correction: the fluorescent light tubes were not shielded, coated, or otherwise shatter-resistant.
  • Physical Facilities in Good Repair
    Observation: A hole in the wall was observed behind the rear bag-in-a-box system ( an access cover panel was not provided for the wall access)
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry by the rear curbed mop sink.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
