    Observation: Observed no water in the 5 gallon bucket that is used for handwashing.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Observed foods hot holding at improper temperatures. 1) Pork ribs 97'F 2) red beans 110'F 3) Chicken 112'F 4) Taco meat 113'F 5) Shrimp 107'F

    Observation: Observed food employee begin to don gloves without washing her hands first.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Observed the following foods hot holding at improper temperatures: 1) Fish filet 126'F 2) beef stew 128'F 3) quesidia 119'F
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Container of chopped lettuce and tomatoes cold holding at improper temperatures. 59'F
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The person in charge could not provide a food temperature measuring device.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.

Inspection for mobile unit to begin serving.
All foods will be cooked at Taco Baja Restaurant.
Food truck has ability to keep foods hot by propane gas. All cooked foods will maintain 135'F.
All cold foods will be kept at 41'F or below by use of ice.
Both canned and bottled drinks will be sold.
Utensils will be pre-wrapped in napkins at the restaurant. PIC may order pre-packaged utensils.
Hand washing will be done with use of a 5 gallon water container with a free flowing spout, paper towels and soap. Gray water will be collected in a bucket and taken back to the restaurant for disposal.will
Assorted prepackaged foods such as chips will be sold.
Discussed with PIC: Thoroughly clean inside of unit before operating.
Mobile unit is in substantial compliance with the Virginia state rules and regulations regarding restaurants. Therefore permit is issued.
