Routine
Inspection for mobile unit to begin serving. All foods will be cooked at Taco Baja Restaurant. Food truck has ability to keep foods hot by propane gas. All cooked foods will maintain 135'F. All cold foods will be kept at 41'F or below by use of ice. Both canned and bottled drinks will be sold. Utensils will be pre-wrapped in napkins at the restaurant. PIC may order pre-packaged utensils. Hand washing will be done with use of a 5 gallon water container with a free flowing spout, paper towels and soap. Gray water will be collected in a bucket and taken back to the restaurant for disposal.will Assorted prepackaged foods such as chips will be sold. Discussed with PIC: Thoroughly clean inside of unit before operating. Mobile unit is in substantial compliance with the Virginia state rules and regulations regarding restaurants. Therefore permit is issued. No violation noted during this evaluation.
