    Observation: A direct connection exists between the drain line of the sanitizing basin of the 3-vat sink and the sewer line. Facility installed a new 3-compartment sink, but did not install it with an air gap between the sanitizing sink and the sewer line.
    Correction: Eliminate the direct connection between the sewer line and the cited equipment.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Yogurt cold holding at improper temperature on the buffet line. Yogurt was placed in the reach in cooler and cold yogurt (40'F) was placed on ice on the buffet line.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory 3-compartment sink area. Soap was provided during inspection.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand sink in the 3-compartment sink area. Paper towels were provided during inspection.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
  • Handwashing Signage/Handwashing Facilities (corrected on site)
    Observation: A sign or poster that notifies food employees to wash their hands is not provided at the hand sink near the 3-comartment sink. A hand washing sign was provided to the person in charge during inspection.
    Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.

The above observations and the following were discussed with the person in charge:
-All milk, bread, etc that is being served to customers is discarded at the end of each breakfast.
-Bleach is used as a sanitizer in the 2 compartment sink, test strips provided.
The menu is limited to coffee, juice, milk, cereal, yogurt, muffins, & croissants (bread item). Breakfast is served from 6:30-9:00 AM.
Food sources approved.
