Water Heater: State, elevated
Dishmachine: N/A
  • Equipment / Good Repair / Operation
    Observation: Observed that the Quat dispenser is not functioning properly, dispensing solution at +500 ppm. CFM was observed diluting solution by adding water to the sink after testing.
    Correction: Have the dispenser repaired. Even though your manager knows to test the sanitizer before using it, ideally the dispenser should operate correctly to mix solution t0 200 - 400 ppm.
  • Critical: Food-Contact Surface Sanitized before Use after Cleaning (corrected on site)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: knife used to cut sandwiches. Knive was observed being rinsed at handsink.
    Correction: All utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning. All equipment must be cleaned and sanitized at the 3-vat sink only.
  • Handwashing Cleanser, Available at Handwashing Facilities (corrected on site)
    Observation: Observed that hand soap was not provided at each handwashing sink. Soap (and dispenser) missing from back handsink.
    Correction: Provide hand soap at each hand sink to allow employees to properly wash their hands. New dispenser arrived this morning. Manager is installing at end of inspection.
