    Observation: Less than 10 foot candles of light was noted in the walk in freezer (light switch is not working)
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

*Sponge was still observed on the counter. Sponges are not to be used for cleaning of food contact surfaces or 3 compartment sinks. Discard sponges and use nylon scrub pads.

*Clean and organized facility.
*Built in thermometer on walk in cooler is not working correctly. DO NOT use this thermometer to monitor temperature of this piece of equipment.
*All cold holding equipment should have a hanging thermometer located in the warmest part of the unit to allow staff to verify the unit can hold food at 41 degrees or lower.
*Noticed one scrub sponge at the handsink on the front line. It was determined from an employee that the scrub sponge was used for cleaning the 3 compartment sink. Sponges are not allow for cleaning of food contact surfaces or the 3 compartment sink. Suggest discarding all sponges and replace them with nylon scrub pads that will dry quickly.

    Observation: All food items in the walk in cooler were observed cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Backflow Prevention, Air Gap*
    Observation: An air gap between the water supply outlet (hose) and the flood rim level of the mop sink is not observed. If this direct connection exists between the potable water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.

Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces. (Self Closing Mechanism on rear exterior door not operational. There is no screen door or air barrier.)
