The above observations and the following were discussed with the person in charge:
-Paper towels observed to be stuck in the paper towel dispenser. Please repair.
-Please notify the health department once the grease trap have been cleaned out/repaired.

  • Equipment - Non-Food Contact Surfaces and Utensils (corrected on site)
    Observation: Surfaces of the soda nozzles on the carbonated beverage dispenser were observed soiled with accumulations of grime and debris. The PIC took the soda nozzles back to be washed and sanitized during the inspection.
    Correction: Clean the surfaces of the soda nozzles at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of equipment were not observed sanitized. Sanitizer in the 3 compartment sink measured at 0 ppm. The PIC corrected the quaternary ammonium sanitizer to 200 ppm during the inspection.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
  • Equipment and Utensils, Air-Drying Required (repeated violation)
    Observation: Plastic food storage containers stored over the 3 compartment sink were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Critical: Plumbing System Maintained in Good Repair (corrected on site)
    Observation: The plumbing under the 3 compartment sink is in poor repair. Observed a small amount of water overflowing from the grease trap during the inspection. The PIC contacted the repair company during the inspection to have the grease trap cleaned out and repaired.
    Correction: Repair and maintain all plumbing components and fixtures.
  • Critical: Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the handsink in the front of the kitchen along the serving line are leaking.
    Correction: Plumbing systems and components shall be maintained in good repair.
  • Outer Openings - Protected (repeated violation)
    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Observed a large hole in the back door of the kitchen around the door handle. Door handle was observed in disrepair.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

-Employee health policy.
-All in use utensils are being washed, rinsed and sanitized at least once every 2 hours.

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: the slicer. The slicer was placed in the warewashing area to be cleaned and sanitized during the inspection.
    Correction: Clean and sanitize these surfaces for food contact.

    Observation: Plastic containers stored by the 3 compartment sink were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. The above observations and the following were discussed with the person in charge:
-Employee health policy.
-All in use utensils are being washed, rinsed and sanitized at least once every 2 hours.
-Seal around the pipe in the wall by the grease trap.
-Replace the thermometer in the under the counter reach in cooler.
-The quaternary ammonium sanitizer in the 3 compartment sink measured at 200 ppm.
Lots of good handwashing and glove use observed during today's inspection, great job by all staff members!
