    Observation: Employees are not aware of or are not monitoring the cold holding temperatures of potentially hazardous food.
    Correction: Ensure that employees are monitoring cold hodlibng temperatures of product and equipment and that corrective action is taken when improper temperatures are observed..
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Folded egg product cold holding at improper temperature in 2-door reach-in refrigerator. Internal food tempedrature measured 51 F. Unit ambiet air temperature measured 60 F.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Note: Product was discarded. Owner notified and instructed staff to discontinue use of refrigerator until unit can be repaired.
