Establishment with an adequate metal food stem thermometer. The three vat sink & wiping cloth/sanitizer set-ups were adequate. Adequate employee health policy in place. Health permit posted & visible.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Meatballs were found hot holding at improper temperatures.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no quaternary test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Provided and discussed FDA form 1-B with operator. Recommended posting this information in the kitchen for easy referencing as well as having staff read, sign and file paper work.
  • Critical: Hands and Arms Cleaning Procedure* (corrected on site)
    Observation: Improper handwashing procedures observed. No soap was used during the hand washing process after employee was observed sweeping and prior to donning gloves.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Yellow egg and egg white cold holding at improper temperatures. Items were moved to the freezer to quick chill.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Refuse - Maintaining Refuse Areas and Enclosures (repeated violation)
    Observation: Trash and litter were observed adjacent to the refuse container outside the facility.
    Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary.
  • Hand Drying Provision
    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen and in the women's rest-room.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Flies noted throughout the facility.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
