    Observation: When tested, no sanitizer or a low concentration of chemical sanitizer was found in the wiping cloth bucket storing wiping cloths used on food contact surfaces.
    Correction: Provide sanitizer at proper concentration and immerse or expose food contact surfaces to sanitizing solution for adequate time.

  • Critical: Backflow Prevention Device, Carbonator
    Observation: The carbonator for the soda fountain machine did not have an adequate backflow prevention device in place to prevent contamination of the potable water lines
    Correction: Provide adequate backflow prevention devices upstream of the carbonator and downstream from any copper in the water supply to prevent contamination.

This restaurant is in the area affected by the Laskin Road water main break. Advised may not use water from faucets for handwashing, for washing utensils/equipment, for preparing food and wiping food contact surfaces. Cannot use soda machine, ice machine. Must use bottled water or boiled water for these functions. Operator will set up handwash station with boiled/bottled water.
