The purpose of this visit was to conduct a complaint inspection. Complainant alleged that there was sewage backup on the driveway coming from this restaurant.
During today's visit, no sewage backup was observed on the driveway. Water ran properly at food establishment during the visit-- bathroom, 3-vat sink.

    Observation: A food employee was observed handling the following ready-to-eat food using their bare hands: LEMON
    Correction: Except when washing fruits and vegetables, food employees may not contact ready-to-eat foods using their bare hands. Employees shall use suitable utensils such as deli tissue, spatulas, tongs, or clean disposable gloves to handle all ready-to-eat foods. WORE GLOVES
  • Food Storage / Preventing Contamination (corrected on site)
    Observation: Food stored on the floor and/or food stored less than 6 inches off the floor. OBSERVED (1) CONTAINER OF POTATO CHIPS (2) BOX OF LETTUCE ON THE KITCHEN FLOOR.
    Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage. MOVED THE FOOD OFF THE FLOOR.
  • Sanitizer Test Kit Required
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QUATERNARY AMMONIA test kit.
  • Microwave Oven Interior & Door Seals Cleaned Every 24 Hours
    Observation: The cavity of the microwave oven is observed soiled.
    Correction: The interiors of all microwave ovens including cavities, door seals, floors, walls, and ceilings shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure.

The purpose of this visit was to conduct a routine inspection.
  • Equipment / Good Repair / Components / Gaskets
    Observation: The door gaskets of the following unit(s) are (missing, damaged): 2 dr and 3dr prep coolers
    Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
  • Critical: Sanitize / Hot Water / Mechanical/Thermolabel Test Verified (corrected on site)
    Observation: Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized.
    Correction: Immediately discontinue use of the dishmachine. Repair the dishmachine so that a thermolabel will turn black. Until the machine is adequately repaired, set up the 3 vat sink to manually wash, rinse and chemically sanitize food-contact surfaces.
