The purpose of this visit was to conduct a risk factor assessment. No food service operations in progress at the time of the inspection. Provided copy of CFM guidelines. Quaternary ammonium sanitizer in 3 vat sink: 300 ppm. PLEASE NOTE: 1) Provide and use log for recording delivery temperatures of TCS (Time/Temperature Control for Safety Foods) to insure that foods are delivered at required hot holding (>135 degrees F) and cold holding (<41 degrees F) temperatures. Foods must be maintained at these temperatures until served. 2) A certified food manager with required CFM photo ID must be on the premises whenever any food service operations are in progress.
