  • Plumbing System Maintained in Good Repair (repeated violation)
    Observation: The sink basin at the handsink in the back of the kitchen is slow to drain.
    Correction: Plumbing systems and components shall be maintained in good repair.

The above observations and the following were discussed with the person in charge:
-Employee health policy-Send Sick Employees Home Now handout provided.
-All in use utensils are washed, rinsed and sanitized at least once every 2 hours.
The facility and all equipment were observed to be very clean, great job by all staff members!

  • Critical: Time as a Public Health Control* (corrected on site)
    Observation: The half and half for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time. PIC provided a timer for the half and half during the inspection.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.
01/13/2015Routine
The above observations and the following were discussed with the person in charge:
-Observed blown light bulbs in the dry storage area, PIC stated they will be replaced today.
-Rinse sink in disrepair, facility is not using the sink at this time.
-Quaternary ammonium sanitizer in the sanitizer bucket measured at 200 ppm.
Facility observed to be very clean and well maintained, great job by all staff members!

    Observation: The nonfood contact surfaces of the following equipment have accumulations of grime and debris: 1. the interior of the reach in cooler in the back of the kitchen 2. the interior of the cabinet under the wash/rinse sink 3. the interior of the under counter reach in cooler in the coffee station.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
