    Observation: Light bulb above the coffee grinder is not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory by the 3 compartment sink
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

The dish machine was sanitizing with hot water with a utensil temperature of 162 degrees F. Employee practices were good. The new asst. manager provided information on reportable illnesses and their signs and symptoms.
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Wiping cloths improperly stored between use in a quaternary sanitizing solution over 400 ppm.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use. Always check the concentration of sanitizer daily to make sure it is at the correct concentration.

All food temperatures were within the acceptable range. The quaternary sanitizer at 3 basin sink was good @ 200 ppm. The dish machine was sanitizing with hot water @ 168 degrees and was good. The dairy products at the condiment station were labeled with time control and all good.

    Observation: Cases of single use cups were observed stored on the floor of storage area.
    Correction: Store single use items in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.
