Risk Factor
The manager provided signs and symptoms of illnesses along with the list of the big 5 reportable illnesses. All food temperatures were within the acceptable range. The dish machine was sanitizing with hot water with a utensil temperature of 172 F and was good. The quaternary ammonia sanitizer concentration was good.
Physical Facilities - Cleaning Frequency and Restrictions Observation: The floor under the large coolers are noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

The above item was corrected. Employee provided information on reportable illnesses. The dish machine was sanitizing with hot water and the 3 compartment sink quat sanitizer was good @ 300 ppm
Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site) Observation: Some of the syrup pumps are not being disassembled to be cleaned.
Correction: Clean and sanitize these surfaces for food contact.
