    Observation: Improper methods used to thaw oatmeal and pasteurized eggs as they were observed thawing in standing water.
    Correction: Thaw potentially hazardous foods by either of the following methods: 1. Under refrigeration that maintains food temperature at 41°F (45°F) 2. Completely submerged under running water at a temperature of 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow. Ready-to-eat food shall not exceed 41°F and raw animal foods shall not exceed 41°F for more than four hours 3. As part of the cooking process
  • Equipment - Good Repair and Proper Adjustment (corrected on site)
    Observation: Lemon wedger was observed in a state of disrepair and damaged as there were twist ties holding the blade on.
    Correction: If unable to repair the wedger, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Handwashing - Using a Handwashing Lavatory (corrected on site)
    Observation: The handwashing facility located at the coffee make station is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the coffee strainer preventing its use.

The purpose of this visit is due to a complaint, # 1109973, of a dirty establishment. Complainant stated the floors were dirty and that her shoes were sticking to them. I discussed the complaint with the manager who was not aware of the complaint. We walked through the dinning area and looked at the entrance. The floor was clean and my shoes did not stick to the floor. Dinning area was clean. A routine inspection was also conducted to day. The establishment was clean.
No violation noted during this evaluation.

    Observation: Employees wearing jewelry on their arms and hands while preparing food.
    Correction: Ensure employees are not wearing jewelry on their arms and hands while preparing food. This section does not apply to a plain ring such as a wedding band.

Complaint reference LEX # 759421. Manager on duty is unaware of complaint. The establishment does have procedures and policies that prohibits cleaning during food preparation. Observations during the inspection indicated that water in the bakery area was in a spray bottle and glass cleaner is in a spray bottle but sprayed only on the rag before use on the glass sneeze guards. In the food preparation area employees use wiping cloths out of a bucket of sanitizer to clean food contact areas. Unable to confirm complaint.
No violation noted during this evaluation.

The above item was corrected. The dish machine was sanitizing with chlorine with a utensil chlorine concentration of 50-100 ppm. All food temperatures were good. Employees were observed washing hands and changing gloves between tasks.

    Observation: Skim milk for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time. Item was discarded.

  • Critical: Cooling* (corrected on site)
    Observation: Ambient temperature or pre-chilled sliced tomatoes not being adequately cooled to prevent the growth of harmful bacteria in that one container of sliced tomatoes were registered at 46 degrees F on shelf in walk in refrigerator. As per the opeartor said tomotaoes had been sliced and placed in said location 5 hours prior to being tested.
    Correction: Cool potentially hazardous foods prepared from pre-chilled ingredients or ingredients at ambient temperature to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.Operator voluntarily discarded said food item

The above item was corrected. The dish machine was sanitizing with chlorine and was good @ 50-100 ppm. All food temperatures were within the acceptable range. Staff was able to provide info on the big 5 reportable illnesses. New date labeling system and tag info is very good.
  • Critical: Food Contact with Equipment and Utensils* (corrected on site)
    Observation: Employee was observed wiping the metal stem of the thermometer off on her apron then stuck the thermometer into food to check the food temperature.
    Correction: Use only cleaned and sanitized utensils or equipment during food preparation. Do not use apron to wipe off a food contact surface as the aprons become soiled and can contaminate the thermometer.
