NO VIOLATIONS OBSERVED. Cafeteria manager and employees knowledgeable on food safety risk factors and employee health. Employees observed washing hands and changing gloves throughout the inspection. Frozen foods observed being thawed under refrigeration. Raw meat in metal pan stored on lower shelf and separated from any other foods in walk-in refrigerator. All foods date marked as required. Dish machine cleaned daily and water changed at least twice a daily. Probe thermometer calibrated and read exactly same as inspectors thermometer (accurate). Temperature monitoring logs kept on all refrigeration units and foods being cooked. Procedures in place for proper cooling of large quantities of food. Employees observed washing hands several times when changing tasks and wearing gloves when handling foods. All employees could answer questions relative to food safety and dedicated to serving safe foods. Temperature monitoring logs are kept on all refrigeration units. NOTE: Hoagie sandwiches had just been prepared for serving prior to checking temperatures. Raw foods handled are ground beef and turkey roasts. Procedures set-up for cooling these foods.
