Employees observed washing hands and changing gloves throughout the inspection. Frozen foods observed being thawed under refrigeration. Raw meat in metal pan stored on lower shelf and separated from any other foods in walk-in refrigerator. All foods date marked as required. Dish machine cleaned daily and water changed at least twice a daily. Probe thermometer calibrated and read exactly same as inspectors thermometer (accurate). Temperature monitoring logs kept on all refrigeration units and foods being cooked. Procedures in place for proper cooling of large quantities of food.
