The following good conditions are noted: an employee (on-site) is certified in food safety management
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Ground beef for tacos is at an improper hot holding temperature.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. The Person in Charge quickly reheated to 208°F.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Crab dip in the make table across from the grill and pasta and potato salad in server cooler are at improper cold holding temperatures.
    Correction: Quickly chill the foods back to 41°F and hold at or below 41°F. The foods were moved to another refrigerated unit.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The food-contact surfaces of some of stain steel pans are visibly soiled.
    Correction: Clean and sanitize these surfaces for food contact. The pans were sent to the dish area for re-washing.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels are available at the hand washing sink in the kitchen.
    Correction: Provide a method to dry hands at all times at the hand sinks. An employee re-stocked paper towels.

Many of the items from the initial pre-opening inspection have been completed or improved:
The Office of Drinking Water (ODW) has issues an Operation Permit (no. 2165185). Crosskeys Vineyards has been submitting water samples to ODW. Coving has been installed along most of the back room. All holes except for the gap just inside the cleaning closet has been filled. The cutting board has been replaced.
Still required for permitting:
(1) A completion statement from VDH when the sewage disposal system has been installed..
(2) Verification from the Rockingham County Building office for the kitchen, serving and Key rooms.
(3) Fill the gap inside the cleaning closet just inside the door (right side). Attach the loose corner of the metal covering at the top right outside of the freezer.
(4) Extend coving along the wall-floor joint of the walk-ins.
(5) The right make table is not cooling adequately for safe storage of potentially hazardous foods (also know as time-temperature for control foods).
The facility may continue to operate Temporary Event but must continue to submit applications (until the Food Establishment Permit is issued).
