    Observation: Employees are not properly trained in food safety as it relates to their assigned duties. Invalid food handler cards. City ordinance required food handler cards. Update them right away. Also several food temperature for food safety question were not answered correctly by food workers. Ensure food safety training is current and maintained

    Observation: Chilli and soft liquid cheese in Ortega hot holding machine were hot holding at improper temperatures. (chilli 101F & cheese 116F) PIC states they have been in machine since yesterday. Items were discarded. Have unit checked and /or repaired for proper hot holding. EHS recommended using a crock pot in the mean time.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period or discard foods depending on time.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) pizza and tomato sauce in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The person in charge could not provide a food temperature measuring device.
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the selves, in side microwave and refrigeration and pizza oven has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing connections under the 3 compartment sink and the faucets at sink are leaking. Email/fax invoice of repairs to local health department. 30 days to have repaired.
    Correction: Plumbing systems and components shall be maintained in good repair.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory in the kitchen. When PIC placed soap in container it leaked soap. Repair dispenser as well
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Mops - Drying Mops (corrected on site)
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Food served consist of popcorn, nacho-n-cheese, commercial pizza and candy. 1B form utilized as health policy. Ensure all food handler cards are current and viewable at inspection. Minimal activity during inspection. Foods are kept refrigerated and cooked as they are ordered.

    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
