Suggest storing all shell eggs in one refrigerator so you don't have to worry about cross contamination. Also suggest storing fruit and/or bread in the white refrigerator near the sinks since it is having trouble holding proper temperature.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Cold holding at improper temperatures: glass door refrigerator on continental breakfast is not holding food at 41 F or below. Cream cheese is 53 F.
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Cream cheese will be discarded within 4 hour time period at the end of the buffet.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Cold holding at improper temperatures: back white refrigerator is not holding food at 41 F or below. Milk is 44 F.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. MIlk relocated to another refrigerator during inspection.

    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Use a bar mesh type material.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory in the back room.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
