  • Insect Control Devices - Design and Installation
    Observation: Insect control device is located over the clean equipment storage rack in the dishwashing area where dead insects may be impelled or fall.
    Correction: Install the insect control device away from a food preparation area so that dead insects and insect fragments are prevented from being impelled onto or falling on exposed food, clean equipment, utensils, and linens, and unwrapped single service and single use articles. Exposed food and food-contact surfaces must be protected from contamination by insects or insect parts. Installation of the device over food preparation areas or in close proximity to exposed food and/or food contact surfaces could allow dead insects and/or insect parts to be impelled by the electric charge, fall, or be blown from the device onto food or food-contact surfaces.

Discussed the following with the PIC:
-All in-use utensils are washed, rinsed, and sanitized every four (4) hours
-Separate utensils are used for products containing peanut butter (allergen)

  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The concentration was measured at 0 ppm in the chemical dish machine. PIC checked the tubing and primed the sanitizer solution. After adjusting, the concentration read 100 pmm bleach.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

All items noted during the previous inspection have been addressed. Once a physical copy of the Building Department Certificate of Occupancy has been issued, a copy will be provided for the health department file.
No food preparation observed during today's inspection.
Facility is within substantial compliance with the Virginia Department of Health Food Regulations, therefore permit is issued. Ensure permit is posted in a location where it is easily seen by the public.

The following items need to be addressed prior to issuance of a health department permit.
1. A certificate of occupancy must be issued by the Spotsylvania County Building Department.
2. Soap, paper towels, and hand washing signs must be posted at all hand sinks.
3. Drain pipes at the three compartment sink and ice machine must be cut to provide adequate air breaks.
4. Dish machine must be operational.
5. Ensure all equipment is washed, rinsed and sanitized prior to use.
6. Final cleaning of physical facility.
7. Ensure reach in cooler (prep cooler) is holding between 36'F and 38'F.
Routine inspection is tentatively scheduled for Thursday November 7th, 2013 at 3:00 PM.
