Manager has a time control policy but writes it up daily. This is unnecessary. One policy should be written and kept on premises that handles your operation. Manager to rewrite policy that encompasses all foods served in kitchen on time control. This was discussed at length. TCS foods that cannot be maintained at proper hot or cold temperatures during the service period should be included on your policy. Remember cut tomatoes, whipped topping, cut melons, ranch dressing( you make in-house) are all TCS foods. Recycle bin is on grass. It should be on asphalt or concrete. Entire ceiling in kitchen is not smooth and cleanable. When these existing panels become soiled or in poor repair, replace with washable,smooth faced vinyl panels. Permit issued.
