The above observations and the following were discussed with the person in charge: -Hot Water Tank: 2 gallons -Fresh Water Tank: 14 gallons -Waste Water Tank: 20 Gallons Menu and food sources approved. Public water provided for the fresh water tank and public sewer provided for waste water all at the vendors home.
Critical: Backflow Prevention Device, When Required* (repeated violation) Observation: Backflow or backsiphonage prevention device not available as required by law. PIC stated they did not have a backflow prevention device for the food grade water hose when connecting to public water. Handouts provided showing required device.
Correction: Provide a backflow or backsiphonage prevention device when connected to all threaded faucets.
Handwashing Cleanser - Availability Observation: Soap was not provided at the hand washing station.
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

Inspection conducted as an opening inspection for Seymour's Auctions, LLC. The above observations and the following were discussed with the person in charge: -Hot Water Tank: 3 gallons -Waste Water Tank: 20 gallons -Fresh Water Tank: 15 gallons -Vendor uses the public water supply at his home for filling water tanks. -Vendor uses the public sewer supply at his home for the disposal of the waste water from the mobile unit. Permit issued.

Inspection conducted as an opening inspection for the 2014 season. The above observations and the following were discussed with the person in charge: Set Up Location: Culpeper Auction Hot Water Heater: 3 Gallons Waste Water Tank: 20 Gallons Fresh Water Tank: 15 Gallons Waste water disposed of at vendor's public sewer system at home. Limited menu of hot dogs, hamburgers, bacon, sausage and eggs. All eggs are fried and not offered undercooked. Foods remain frozen until prepared except eggs. Public water provided to fill fresh water tank at vendor's home. Employee health policy discussed, handouts provided. Please provide a copy of the food safety certification, handouts provided regarding classes. Facility permitted to operate.

A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
