During this inspection the facility appeared clean, well organized and in good repair. During this inspection the kitchen staff was observed practicing very good hand washing and clean as they go procedures. Discussed: employee health policy, cooling procedures, sanitizer mixing solutions, and time as a public safety measure.

Substantial compliance with the Virginia Food Regulations as observed on this date. Discussed employee health policy and the need to monitor / adjust the chlorine dispensing at the commercial dish machine since it was dispensing at near / at 200 ppm on final rinse. (Follow manufacturer's directions to keep levels at 50-100 ppm on final rinse).

    Observation: Some prepared foods were not labeled as to production or discard date.
    Correction: Foods held more than 24 hours are to be code-dated. Owner agreed to label food items.

    Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees. Front wait staff hand wash station did not have proper signage.
    Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees. Owner agreed to correct.
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Working containers of cleaning chemicals are not properly labeled. Verify that all working containers are appropriately labeled with w/ English common name and in the predominant language of the staff.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
