Generally, facility observed to be clean and well ordered. Good food temperatures observed throughout the flow of food. Left handounts on employee health.
- Plumbing System Maintained in Good Repair (repeated violation)
Observation: Observed drainwater going on floor under 3-compartment sink. Also observed grease trap to be very small in relation to the size of the 3-compartment sink and open site drain had be added to middle of drain pipe under 3-compartment sink..
Correction: Advised operator to have a commercial plumber evaluate current design and construction of open site drain and grease trap size as well as cleaning/maintenance schedule for grease trap. The goal being to ensure drainwater coming from sink does not go onto floor. Operator to send evaluation by plumber to health department by fax or email by COB on Monday, March 2, 2015.
- Floors, Walls, and Ceilings - Cleanability (repeated violation)
Observation: Ceiling in kitchen is staining and paint peeeling. It is not smooth and easily cleanable.
Correction: Repair or replace ceiling to make it smooth and easily cleanable.

Generally, facility appeared to be clean and well ordered. New process for cooling sliced deli meat in freezer prior to placing out for prep. Hot water at 3 compartment sink was high at 135oF Operator to check with chemical supplier to ensure proper water temperature for adequate sanitization in 3 compartment sink.
- Equipment - Good Repair and Proper Adjustment
Observation: Small undercounter prep refrigerator was observed in a state of disrepair and damaged--it appears temperature is slightly elevated and it needs repair..
Correction: Repair the @EQUIPMENT@ to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
- Floors, Walls, and Ceilings - Cleanability
Observation: Wall or wall covering behind 3-compartment sink is black, rough, and is not smooth and easily cleanable.
Correction: Repair or replace wall or wall covering to make it smooth and easily cleanable.
- Lighting, Intensity (repeated violation)
Observation: Less than 50 foot candles of light was noted in the rear prep area at prep table where slicer located and under hood
Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
- Lighting, Intensity (repeated violation)
Observation: Less than 20 foot candles of light was noted in the front kitchen handwash area.
Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms
