  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: foods in lowboy not at proper cold holding temperatures. Food transported on cart and is hot outside. The temperatures will be monitered to ensure they cool back down to 41 within 4 hours.

    Correction: TCS foods must be maintained 41 or less to prevent growth of harmful bacteria.
