Discussed:
Storage life of deli meats. Deli meats can be held in the refrigerator unopened until the manufacturer's expiration date. Once the package is opened, all portions of the deli meat must be served within 7 days (not to exceed the manufacturer's expiration date) or can be frozen.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The Person in Charge could not produce a working small diameter probe thermometer.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gaskets to the reach in cooler on the serving line are poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.

One reach in cooler was not in service at the time of the inspection. Person in Charge stated the parts have been ordered and maintenance will make repairs after the parts come in.

Temperatures will be monitored in the milk box and milk will be relocated if needed.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Milk cold holding at improper temperatures in the Powers milk box. Chocolate milk had an internal temperature of 47'F and Skim milk had a surface temperature of 47'F in the front of the unit. Skim milk in the back of the unit measured 41'F (surface temperature). (The Person In Charge stated that she noticed the milk box was open after the delivery driver stocked the unit and belives that is why the temperatures were elevated.)
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: 1. Floors and shelving in the back storage area in need of cleaning. 2. Vent above the dish machine observed with dust accumulation.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • Pests - Controlling Pests*
    Observation: Mouse droppings observed on the floor and one a shelf (where paper is stored) in the back storage area.
    Correction: Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

The above observations and the following were discussed with the person in charge:
-The steamer will be repaired this year.
-Please provide covers for the light bulbs in the dry storage area.
-The Quaternary Ammonium 146 sanitizer in the 3 compartment sink and in the sanitizer buckets measured at 200 ppm.
The facility and all equipment was observed to be very clean and well maintained, great job by all staff members.
