    Observation: In-use ice scoop improperly stored between use.
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours.

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Cheesecake and whipped cream cold holding at improper temperatures
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
  • Warewashing Machines, Sanitizer Level Indicator
    Observation: The warewashing machine is not equipped with a device to warn of low sanitizer level - not connected to alarm in place.
    Correction: Alter or replace the warewashing machine so that an audible or visual warning is given when more chemical sanitizer needs to be added.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory in the front wait staff area.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

The dish machine was sanitizing with chlorine and was good @ 50-100 ppm. The quat sanitizer at the 3 basin sink was good @ 200 ppm. Date labeling was good. Employees were observed changing gloves between tasks and washing hands. Make sure all employees are trained to report the diagnosis of the big 5 illness.

    Observation: Employees or applicants are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food, including the date of onset of jaundice or of an illness due to Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus
    Correction: Have the license holder require employees or applicants report to the person in charge any information about their health and activities if they are diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus. Handouts covering the reportable illnesses were given to the manager to train staff.
08/13/2014Routine
The purpose of today's visit is due to a fire in the kitchen. The fire happened overnight. Some equipment was damaged. The small flat top and a 4 burner are being replaced. Part of the stainless steel wall covering behind cook station has been replaced. The final touches of sealing the wall is being conducted at this time. Electrical inspector is also on site. All damaged equipment and wall has been replaced. Fire suppression system has been check and approved by fire Marshall per the manager of Red Robin. All food utensils on the cook line and on the prep line across from the cook line will have to be removed, washed, rinsed, and sanitized prior to use. Approved for re-opening once the fire Marshall and electrical inspector has signed. off and all cleaning of the kitchen area has been completed.
